The Breakfast Options

Bacon, Egg, and Cheese is a popular breakfast combination and a no-brainer as a Breakfast Quesadilla option.  Other options will substitute bacon for ham, sausage, or steak.  Of course there will be specialty items such as the Western or Denver Quesadilla. Maybe for another breakfast option, we'll even find a way to use a big pancake instead of a tortilla.

The Desserts


Some dessert options have already been offered through your comments.  One of those is an Apple Cinnamon Quesadilla.  Of course when desserts are concerned, the cheese will be ommitted, making the name somewhat contradictory. Perhaps they will simply be called "dillas" :)

Other Dessert "Quesadilla" ideas include the following:
  • Bananas Foster
  • Peach Cobbler
  • Blueberry Cobbler
  • S'mores
  • Strawberries and chocolate

Any other suggestions out there?

The Sides

Chips and salsa will likely be the most popular side/appetizer available. Of course guacamole and sour cream will also be available for dipping.

One challenge for Queso Loco is to determine other sides to offer.  When one of the menu offerings is a Bacon Cheeseburger Quesadilla, it seems only logical to offer Fries as a side as well.  Other options might be bagged chips or perhaps a small dish of fruit or vegetables.

The Condiments

As one reader suggests, great quesadillas often need to be complimented by fresh condiments.  A few condiments that will always be available at Queso Loco are fresh Guacamole, Sour Cream, and Salsa.

The Chicken

My favorite type of quesadilla, at least up to this point, is chicken.  In my opinion, they are best with a decent amount of lightly seasoned, super moist, all white-meat chicken.  The cheese is mild to sharp, not overpowering the chicken but complementing its flavor.  Sometimes incorporating a tangy sauce enhances the overall experience.  The tortilla is flexible, grilled to a crispy golden brown in order to provide a mouthwatering crunch to each bite.
